Mango Sai Mai Lo

A few weeks ago Elaine Leo emailed and requested asked me if I have a recipe for Mango Sai Mai Lo. I’ve had it before but have never attempt making it. I told Elaine that I’ll try to make it once I get whole of some juicy sweet mangoes. With mangoes not always readily available where I am, it took me a while to get some good looking mangoes.

The verdict of the Mango Sai Mai Lo… YUMS! I do wish my mangoes did not have so much fiber. Oh well, beggars can’t be choosers!! Here’s the recipe! You do need to make sure that you use sweet juicy mangoes to get the yummiest result! Elaine, I hope you like this!

MANGO SAI MAI LO RECIPE

Ingredients:

  • 2 Lb Sweet Juicy Mangoes
  • 1/2 Cup Sugar
  • 1 Can Evaporated Milk (12 Fl Oz)
  • 1/2 Cup Tapioca/Sago Pearls
  • Water
  • 2 Cups Ice

Method:

In a small pot, boil sugar and 1/2 cup water over high heat until sugar dissolved. This should take about 5 minutes and will give you about 3/4 cup of simple syrup. Let syrup cool.

In another pot, boil 4 cups of water over high heat and add in sago/tapioca pearls once water is boiling rapidly. Boil sago/tapioca pearls for 10 minutes and switch of flame. Cover sago /tapioca for about 10 minutes. Then sieve tapioca and run cold water thru. Set aside.

Peel mangoes, dice them up and discard pit. Set aside 1-1/2 cups of diced mangoes. Blend the rest of the the diced mangoes and 1/2 cup of simple syrup until smooth. Add sago, pureed mangoes,  diced mangoes, evaporated milk, ice and 1 cup of water into a bowl. Mix well, taste and add remaining simple syrup to achieve desired sweetness. Chill a little longer before serving if you like.MangoSaiMaiLo1
