Last week, I wanted to make hubby and I dinner to go….We had an ice-hockey game to catch and I did not feel like eating out before the game. With some leftover rotisserie chicken in the fridge, I thought of making us a wrap. This wrap is definitely inspired by the to-die-for chicken kebab we had in Florence.
Instead of using a regular tortilla wrap to hold the chicken, the vegetable and the sauce…I used a Malaysian favorite; Roti Canai/Pratha. I bought them frozen (and uncooked) in a package of 5 for about $1-2 per packet. These frozen “bread” can be easily found in many Asian grocery stores. I cooked the Roti Canai in a pan with some melted butter until both sides are crisp and brown. For the chicken filling, I mix some shredded rotisserie chicken, chopped cilantro and a drizzle of olive oil to keep the meat moist. I also made a sauce for the wrap which consist of mayo, ketchup and some chili sauce.
With a piece of foil under the cooked Roti Canai, I piled the chicken, chopped Romaine Lettuce, chopped tomatoes and drizzled my homemade sauce over them. Then, I slowly wrap the Roti Canai and roll it up with the piece of foil….making a tight roll as I can. I couldn’t wait to indulge in it! Although we ate it cold, it was nevertheless still yummy. I bet it would have tasted better warm! The Roti Canai is slightly thicker and chewier than your tortilla wrap, but it’s definitely more fragrant too! Must be the butter! =)
You should also try curry chicken instead of rotisserie chicken next time.
