Claypot Chicken Rice is scrumptious dish quite a commonly found in Malaysia. Cooking the rice in a claypot will give the dish a slightly charred yet fragrant flavor. However, I will sometimes make this in a regular rice cooker!
Here’s how I make them and they are always a hit! I made some last night for dinner using my rice cooker, and although I was missing 2 optional ingredients; it was never the less scrumptious!
If you have a piece of salted fish in the pantry, cut it up into pieces and fry it till fragrant. Add the fried salted fish in when you’re mixing the stir fried chicken and mushroom into the cooked rice.
CLAYPOT CHICKEN RICE
Ingredients:
- 2 Cups Chicken, Boneless and Cut Into Bite Size; Preferably Dark Meat
- 1/2 Cup Chinese Mushrooms, Soaked and Cut Into Halves
- 2 Cloves Garlic, Minced
- 2 Tbsp vegetable Oil
- 2-1/2 Tbsp Dark Sweet Soy Sauce
- 3 Tbsp Regular Soy sauce
- 1 Tsp Sesame Oil
- 1/4 Tsp Black Pepper
- 1/8 Tsp White Pepper, Plus More If Desired
- 1/4 Tsp Salt
- 1/4 Cup Scallion/Green Onions, Chopped
- 1-1/2 Cup Uncook Rice
- Water
- 1 Chinese Sausage, Sliced Thinly (**Optional)
- 2-3 Tbsp Fried Shallots (**Optional)
Method:
Wash and cook rice like how you would normally do (in a pot or rice cooker). While that is cooking, mix chicken, mushroom, soy sauce, sesame oil, black & white pepper and salt in a medium bowl and let that quickly marinate for 5-10 minutes.
Once you’ve marinated the meat (and mushroom), heat vegetable oil (If you have Chinese Sausage, it’s ok to reduce oil to 1Tbsp) in pan and add garlic as well as Chinese sausage. Sauté till fragrant then empty out marinated chicken, mushroom and the marinate into the pan. Stir fry chicken and mushroom for 10-15 minutes till chicken is thoroughly cooked. Set aside. The chicken & mushroom stir fry will be a little salty, but this is ok as you are going to mix it with rice.
When the rice is cooked, add stir fried chicken and mushroom (plus sauce/gravy) as well as half the chopped scallion into the pot of cooked rice. Mix well. Before serving, top it up with more chopped scallions and fried shallots. This serves 2-3 people!
I would sometimes serve this Claypot Chicken Rice with some fried eggs, easy over and some stir-fry vegetable.YUMSS!!
